2 medium-sized zucchinis

1 tablespoon olive oil

1 teaspoon sea salt

Begin by washing the zucchinis thoroughly under cold water. Trim the ends and slice them into thin rounds or half-moons, about 1/4 inch thick.

    In a large mixing bowl, combine the sliced zucchinis with olive oil and sea salt. Toss them gently to ensure that each piece is well-coated.

      Preheat a skillet or non-stick frying pan over medium heat. Once hot, add the zucchini slices in a single layer. You may need to do this in batches depending on the size of your skillet.

        Cook the zucchinis for about 3-4 minutes on one side until they start to soften and turn golden brown. Flip them and cook for an additional 3-4 minutes on the other side.

          Once they are nicely browned and tender, remove them from the skillet and serve warm as a side dish or a light appetizer.
