2 large cucumbers, thinly sliced

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

2 tablespoons rice vinegar

1 tablespoon olive oil

1 teaspoon honey or agave syrup (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon sesame seeds (for garnish)

Instructions
 

In a large mixing bowl, combine the thinly sliced cucumbers and red onion. Toss gently to mix.

    In a small bowl, whisk together the rice vinegar, olive oil, honey (if using), salt, and black pepper until well combined.

      Pour the dressing over the cucumber and onion mixture. Add the chopped cilantro and toss everything gently to ensure the vegetables are well-coated with the dressing.

        Allow the salad to sit for a minute to marinate slightly before serving.

          Sprinkle sesame seeds on top for garnish and serve immediately.
