Ingredients
  

For the Blackened Salmon:

4 salmon fillets (6 ounces each)

2 tablespoons paprika

1 tablespoon cayenne pepper

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons olive oil (for cooking)

For the Mango Salsa:

1 large ripe mango, diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeds removed and minced (optional)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Prepare the Spice Mix: In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper. This will be your blackening spice mix.

    Season the Salmon: Pat the salmon fillets dry with paper towels. Generously rub the blackening spice mix onto all sides of each fillet.

      Make the Mango Salsa: In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño (if using), cilantro, and lime juice. Season with salt and pepper to taste. Set aside to allow the flavors to meld.

        Cook the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the salmon fillets to the skillet, skin-side down (if applicable). Cook for about 4-5 minutes on the first side, or until the salmon is dark and charred. Carefully flip the fillets and cook for an additional 3-4 minutes, or until cooked through and flaky.

          Serve: Plate the blackened salmon fillets and top with a generous spoonful of the mango salsa. Serve immediately while hot.
