Ingredients

4 boneless, skinless chicken thighs

1 cup fresh spinach, chopped

½ cup sun-dried tomatoes, chopped

1 cup creamy goat cheese

1 cup heavy cream

2 cloves garlic, minced

1 teaspoon dried oregano

1 tablespoon olive oil

Salt and pepper to taste

½ cup pine nuts, toasted

1 tablespoon fresh basil, finely chopped (for garnish)

Zest of 1 lemon

Instructions

Prepare the Chicken: Pat the chicken thighs dry with a paper towel. Season both sides with salt, pepper, and dried oregano.

Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs and cook until golden brown on both sides, about 5 to 6 minutes per side. Once cooked, remove from the skillet and set aside.

Make the Creamy Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for 1 minute until fragrant. Then, add the heavy cream and goat cheese, stirring until the cheese melts and the sauce becomes creamy.

Add Sun-dried Tomatoes and Spinach: Stir in the chopped sun-dried tomatoes and spinach, cooking for an additional 2-3 minutes until the spinach wilts.

Combine Chicken and Sauce: Return the chicken thighs to the skillet, spooning the creamy sauce over the top. Let simmer for 5 minutes to heat the chicken through and meld the flavors.

Toast Pine Nuts: In a separate small skillet, toast the pine nuts over medium heat, stirring frequently, until golden brown. Remove from heat.

Serve: Plate the chicken, generously spooning the creamy tomato and spinach sauce over it. Sprinkle the toasted pine nuts on top, followed by a sprinkle of lemon zest and chopped fresh basil for garnish.
