1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup orzo pasta

1 cup sun-dried tomatoes, finely chopped (oil-packed is best)

1 medium onion, diced

3 cloves garlic, minced

2 cups chicken broth

1 teaspoon dried Italian herbs (or 1 tablespoon fresh)

1/2 teaspoon red pepper flakes (optional, for heat)

1 cup fresh spinach, roughly chopped

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Season the cubed chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, until golden brown and cooked through. Remove the chicken and set aside.

    Cook Aromatics: In the same skillet, add diced onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes (if using), and cook for another minute until fragrant.

      Add Orzo and Liquid: Stir in the chopped sun-dried tomatoes and orzo pasta, ensuring the pasta is well coated with the oil and aromatics. Add the chicken broth and dried Italian herbs. Bring to a gentle simmer.
