2 boneless, skinless chicken breasts

1 cup uncooked jasmine rice

2 cups chicken broth

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

2 cups fresh spinach

1/2 cup cherry tomatoes, halved

1/2 cup sour cream

3 cloves garlic, minced

1 tablespoon lemon juice

1 tablespoon fresh parsley, chopped

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Rice: In a medium saucepan, combine jasmine rice and chicken broth. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until the rice is tender and all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare the Chicken: While the rice is cooking, season the chicken breasts with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.

      Cook the Chicken: In a large skillet over medium-high heat, heat olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked through and golden brown. Transfer the chicken to a plate and let it rest for a few minutes before slicing it into strips.

        Make the Creamy Garlic Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned. Stir in the sour cream and lemon juice, mixing until smooth. Let it simmer for a minute to thicken slightly.

          Add Spinach and Tomatoes: Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the halved cherry tomatoes and mix to combine.

            Assemble the Bowls: In serving bowls, layer the cooked rice, followed by sliced chicken. Top with the creamy garlic sauce, sautéed spinach, and tomatoes.
