Ingredients
  

1 lb (450g) ground chicken

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 packet (1 oz) taco seasoning

1 cup salsa

2 cups tortilla chips, slightly crushed

2 cups shredded cheddar cheese

1 cup sour cream

1/2 cup chopped green onions

1/2 cup diced tomatoes (optional, for garnish)

1/4 cup fresh cilantro, chopped (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet over medium heat, add the ground chicken and cook until browned, about 5-7 minutes. Break it up into small pieces with a spatula.

      Add Seasoning: Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 2-3 minutes until everything is heated through. Remove from heat.

        Layer the Casserole: In a 9x13 inch baking dish, spread half of the crushed tortilla chips evenly across the bottom. Pour the chicken mixture over the chips, then spread half of the sour cream on top. Sprinkle with 1 cup of shredded cheese.

          Repeat the Layers: Add the remaining crushed tortilla chips, the rest of the chicken mixture, the remaining sour cream, and finish with the last cup of shredded cheese.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

              Garnish and Serve: Once out of the oven, allow the casserole to rest for 5 minutes. Top with chopped green onions, diced tomatoes, and fresh cilantro if desired. Serve warm and enjoy!
