Ingredients

3 lbs of russet potatoes, peeled and cubed

1 cup chicken or vegetable broth

½ cup milk (whole or 2%)

½ cup sour cream

4 tablespoons unsalted butter

2 garlic cloves, minced (optional)

Salt and pepper to taste

¼ cup freshly chopped chives or parsley for garnish (optional)

Instructions

Prepare the Potatoes: Peel and cube the russet potatoes into evenly sized pieces to ensure they cook uniformly.

Add to Crockpot: Place the cubed potatoes into the crockpot and pour over the chicken or vegetable broth. If using, sprinkle minced garlic for added flavor.

Cook: Cover and cook on low for 6-8 hours, or on high for 4 hours, until the potatoes are tender.

Mash: Once the potatoes are cooked, use a potato masher or a hand mixer to mash the potatoes directly in the crockpot.

Add Ingredients: Stir in the milk, sour cream, butter, salt, and pepper. Mix well until creamy and smooth, adjusting the milk as needed for your desired consistency.

Serve: Taste and adjust seasoning if necessary. Serve warm, garnished with chopped chives or parsley if desired.
