Ingredients
  

3-4 pound beef chuck roast

2 tablespoons olive oil

1 large onion, sliced

4 cloves garlic, minced

4 carrots, cut into 2-inch pieces

3 stalks celery, cut into 2-inch pieces

1 cup beef broth

1 cup red wine (optional, replace with more broth if desired)

2 tablespoons tomato paste

2 teaspoons dried thyme

2 teaspoons dried rosemary

Salt and pepper, to taste

2 bay leaves

Sear the Beef: Heat olive oil in a large skillet over medium-high heat. Season the chuck roast with salt and pepper. Sear the roast on all sides until browned, about 3-4 minutes per side. Transfer to the crockpot.

    Sauté Aromatics: In the same skillet, add sliced onion and minced garlic. Sauté for 2-3 minutes until softened. Pour in the beef broth and red wine (if using), scraping the bottom of the skillet to release any brown bits.

      Combine Ingredients: Add the tomato paste, dried thyme, dried rosemary, and bay leaves to the skillet. Stir to combine, then pour the mixture over the roast in the crockpot.

        Add Vegetables: Layer the carrots and celery around the roast in the crockpot. Season everything with a touch more salt and pepper.

          Cook: Cover the crockpot and cook on low for 8-10 hours or high for 4-6 hours, until the beef is tender and shreds easily with a fork.

            Serve: Once cooked, remove the roast and vegetables from the crockpot. Let the roast rest for 10 minutes before slicing. Serve with the cooking juices drizzled over the top.
