1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cups carrots, sliced

2 cups celery, diced

4 cups chicken broth

1 cup heavy cream

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

For the Dumplings:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1 tablespoon fresh thyme, chopped

1/4 cup unsalted butter, cold and cubed

3/4 cup whole milk

Instructions
 

Prepare the Chicken Stew:

    - In a large pot over medium heat, add olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.

      - Stir in the minced garlic and cook for another minute until fragrant.

        - Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.

          - Next, add the sliced carrots and diced celery. Sauté for another 5 minutes.

            - Pour in the chicken broth and heavy cream. Stir to combine, then bring the mixture to a gentle simmer.

              - Season with thyme, rosemary, salt, and black pepper. Let the stew simmer for about 15-20 minutes to allow the flavors to meld.

                Make the Dumplings:

                  - In a medium bowl, combine the flour, baking powder, salt, and fresh thyme. Whisk until evenly mixed.

                    - Cut in the cold cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

                      - Add the milk gradually, stirring until just combined. Do not overmix; a few lumps are okay.

                        Cook the Dumplings:

                          - After the chicken stew has simmered for 20 minutes, drop spoonfuls of the dumpling batter onto the surface of the stew. You should have about 8-10 dumplings.

                            - Cover the pot with a lid and let it cook for an additional 15 minutes without lifting the lid. The dumplings will steam and puff up.

                              Serve:

                                - Once the dumplings are cooked through, carefully ladle the chicken and dumplings into bowls.

                                  - Garnish with fresh parsley and serve hot.
