Ingredients
  

4 bone-in pork chops (about 1 inch thick)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 tablespoon Dijon mustard

¼ cup chicken broth (or dry white wine)

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Pork Chops: Start by patting the pork chops dry with paper towels. Season both sides generously with salt and pepper.

    Sear the Pork Chops: In a large skillet over medium-high heat, add the olive oil. Once it’s hot, carefully place the pork chops in the skillet. Sear them for about 4-5 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 145°F). Remove them from the skillet and set aside.

      Prepare the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add the butter, and once melted, throw in the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

        Add Herbs and Mustard: Stir in the thyme, rosemary, and Dijon mustard, mixing well to incorporate everything.

          Deglaze the B pan: Pour in the chicken broth (or wine) to deglaze the pan, scraping up any bits stuck to the bottom. Let the sauce simmer for 2-3 minutes until it slightly thickens.

            Return Pork Chops to the Skillet: Place the pork chops back into the skillet, and spoon the sauce over them. Allow them to soak up the flavors for a couple of minutes.

              Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and serve immediately with your favorite sides such as mashed potatoes or sautéed green beans.
