Ingredients

1 lb Brussels sprouts, trimmed and halved

2 tbsp olive oil

3 tbsp balsamic vinegar

2 tbsp honey

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1/4 cup crumbled feta cheese (optional for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the Brussels sprouts, olive oil, balsamic vinegar, honey, garlic powder, salt, and black pepper. Toss until the Brussels sprouts are well coated.

Spread the Brussels sprouts in a single layer on the prepared baking sheet.

Roast in the preheated oven for 20-25 minutes or until the sprouts are tender and caramelized, stirring halfway through for even cooking.

Once done, remove from the oven and let them cool for a minute.

Drizzle with extra balsamic vinegar or honey if desired, then sprinkle with crumbled feta cheese and fresh parsley before serving.
