2 lbs beef short ribs (flanken style)

½ cup soy sauce

¼ cup brown sugar

¼ cup sesame oil

¼ cup rice vinegar

8 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons gochujang (Korean chili paste)

1 tablespoon sesame seeds

4 green onions, chopped

1 tablespoon freshly cracked black pepper

1 tablespoon water

Optional garnish: additional sesame seeds and sliced green onions

Instructions
 

Prepare the Marinade: In a large mixing bowl, combine soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, minced ginger, gochujang, black pepper, and water. Whisk until the sugar is dissolved and the marinade is well-combined.

    Marinate the Short Ribs: Place the beef short ribs in a large zip-top bag or a shallow dish. Pour the marinade over the ribs, ensuring they are fully submerged. Seal the bag (or cover the dish) and refrigerate for at least 4 hours, preferably overnight for the best flavor.

      Preheat the Grill: About 30 minutes before cooking, preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to burn down until they're covered in ash.

        Grill the Ribs: Remove the short ribs from the marinade and let any excess drip off. Grill the ribs for about 4-5 minutes on each side, or until they are caramelized and have nice grill marks. The internal temperature should reach about 145°F for medium rare.

          Garnish and Serve: Once the ribs are cooked, remove them from the grill and let them rest for a few minutes. Sprinkle with sesame seeds and chopped green onions before serving.
