Lemon Chicken Rice Bake

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1 cup uncooked jasmine rice

2 cups chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 lemon (zest and juice)

1 cup frozen peas

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large ovenproof skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Stir in the minced garlic and sauté for another minute until fragrant.

        Season the chicken thighs with salt, pepper, thyme, and smoked paprika. Push the onion and garlic to the side and add the chicken thighs to the pan. Sear on both sides until golden brown, about 5 minutes per side.

          Remove the chicken from the skillet and set aside. In the same skillet, stir in the uncooked rice, lemon zest, and lemon juice. Mix well to combine.

            Pour in the chicken broth, and bring the mixture to a gentle simmer. Taste and adjust seasoning if necessary.

              Nestle the seared chicken thighs back into the rice mixture and cover the skillet with a lid or aluminum foil.

                Transfer the skillet to the preheated oven and bake for 30 minutes.

                  After 30 minutes, remove the cover and sprinkle the frozen peas over the top. Bake uncovered for an additional 10-15 minutes, or until the rice is tender and all liquid is absorbed.

                    Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley.
