Ingredients
  

3 lbs russet potatoes, peeled and cubed

1 cup sour cream

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/2 cup cooked and crumbled bacon

1/3 cup sliced green onions (plus extra for garnish)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

1/2 cup shredded mozzarella cheese (for topping)

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Cook the Potatoes: In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return them to the pot.

    Mash the Potatoes: Add the sour cream, heavy cream, cream cheese, garlic powder, onion powder, salt, and pepper to the cooked potatoes. Mash until smooth and creamy. Adjust seasoning if needed.

      Mix in the Goodies: Fold in the cooked bacon, green onions, and shredded cheddar cheese, mixing until well combined.

        Prepare the Casserole Dish: Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish with cooking spray or butter.

          Layer the Casserole: Spread the loaded mashed potato mixture into the prepared casserole dish, smoothing the top with a spatula.

            Add Toppings: Sprinkle the mozzarella and Parmesan cheese evenly over the top of the mashed potato mixture.

              Bake: Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden.

                Serve: Remove from the oven, let cool for a few minutes, then garnish with additional sliced green onions. Serve hot as a hearty side dish!
