200g egg noodles (or your preferred noodles)

250g ground beef

2 tablespoons vegetable oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1-inch piece of ginger, minced

1 bell pepper (any color), thinly sliced

2 cups bok choy, chopped

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 teaspoon chili paste (optional)

Salt and pepper, to taste

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Cook the Noodles: Bring a pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onion, minced garlic, and minced ginger. Stir-fry for about 2-3 minutes until fragrant and the onion is translucent.

      Brown the Beef: Push the aromatics to one side of the skillet and add the ground beef. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Season with salt and pepper.

        Add Vegetables: Once the beef is fully cooked, add the sliced bell pepper and chopped bok choy to the skillet. Stir well and cook for an additional 3-4 minutes until the veggies are tender yet still crisp.
