Ingredients
  

1 lb Italian sausage (spicy or mild, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon Italian seasoning

4 cups chicken or vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup heavy cream

1 package (16 oz) gnocchi

2 cups fresh spinach, roughly chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot over medium heat, add the Italian sausage. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables begin to soften.

      Stir in the minced garlic and Italian seasoning, cooking for one additional minute until fragrant.

        Pour in the chicken or vegetable broth and the undrained diced tomatoes. Bring the mixture to a simmer.

          Add the gnocchi to the pot and cook according to package instructions, about 3-5 minutes until they float to the top.

            Lower the heat and stir in the heavy cream and chopped spinach. Cook until the spinach wilts and the soup is heated through, about 2-3 minutes.

              Season with salt and pepper to taste.

                Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
