1 lb (450g) chicken breast, cut into strips

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup finely grated Parmesan cheese

1 tsp garlic powder

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp Italian seasoning

Cooking oil (for frying)

Fresh parsley, chopped (for garnish, optional)

Prepare the Coating Station: Set up three shallow bowls. In the first bowl, add the flour. In the second bowl, whisk the eggs until well beaten. In the third bowl, mix the breadcrumbs, grated Parmesan, garlic powder, paprika, black pepper, salt, and Italian seasoning.

    Coat the Chicken: Take each chicken strip and coat it in flour, shaking off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the chicken strip in the Parmesan breadcrumb mixture, pressing gently to ensure the coating adheres well. Repeat this process for all chicken strips.

      Heat the Oil: In a large skillet, pour about 1/2 inch of cooking oil and heat it over medium-high heat. To test if the oil is hot enough, drop a small piece of the breadcrumb mixture into the oil; it should sizzle immediately.

        Fry the Chicken Strips: Carefully place the coated chicken strips into the hot oil in batches, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side or until they are golden brown and cooked through. You might need to adjust the heat to prevent burning.

          Drain and Serve: Once cooked, transfer the chicken strips to a plate lined with paper towels to drain excess oil. Optionally, sprinkle with additional salt and freshly chopped parsley for garnish.
