For the Rack of Lamb:

1 rack of lamb (8 ribs, frenched)

2 tablespoons Dijon mustard

1 cup fresh breadcrumbs

1/2 cup grated Parmesan cheese

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

3 cloves garlic, minced

Salt and pepper, to taste

2 tablespoons olive oil

For the Garlic Mashed Potatoes:

2 pounds Yukon Gold potatoes, peeled and cut into chunks

4 cloves garlic, peeled

1/2 cup heavy cream

4 tablespoons unsalted butter

Salt and pepper, to taste

Chives, for garnish (optional)

Instructions
 

Prep the Rack of Lamb:

    - Preheat your oven to 400°F (200°C).

      - Season the rack of lamb generously with salt and pepper. In a small bowl, mix the Dijon mustard, olive oil, minced garlic, rosemary, and thyme.

        Coat the Lamb:

          - Rub the mustard mixture all over the lamb, ensuring it's evenly coated.

            Prepare the Herb Crust:

              - In another bowl, combine the breadcrumbs with grated Parmesan cheese, salt, and pepper. Press this mixture onto the lamb, covering it evenly.

                Roasting the Lamb:

                  - Place the rack of lamb, meat side up, on a roasting pan. Roast in the preheated oven for about 20-25 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer to check; a temperature of 125°F (52°C) for medium-rare is ideal.

                    - Let it rest for 10 minutes before slicing between the ribs.

                      Make the Garlic Mashed Potatoes:

                        - While the lamb is roasting, bring a large pot of salted water to a boil. Add the potatoes and garlic cloves. Cook until the potatoes are tender, about 15-20 minutes.

                          - Drain the potatoes and garlic, then return them to the pot. Add the heavy cream, butter, salt, and pepper. Mash until smooth and creamy. Adjust seasoning to taste.

                            Serve:

                              - Slice the rack of lamb into individual chops and arrange them on a plate alongside a generous serving of garlic mashed potatoes. Garnish with chopped chives if desired.
