Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons sesame oil

2 tablespoons freshly grated ginger

3 cloves garlic, minced

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 cup snap peas

1 carrot, thinly sliced

3 green onions, chopped (white and green parts separated)

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds for garnish

Cooked rice or noodles for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken with 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and half of the grated ginger. Allow it to marinate for at least 15 minutes.

    Prepare the Sauce: In a separate bowl, whisk together the remaining soy sauce, honey or maple syrup, rice vinegar, and the rest of the ginger. Set aside.

      Heat the Pan: In a large wok or frying pan, heat the remaining sesame oil over medium-high heat. Once hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes until the chicken is browned and cooked through, stirring occasionally. Remove from the pan and set aside.

        Sauté the Vegetables: In the same pan, add garlic, sliced bell pepper, broccoli, snap peas, carrot, and the white parts of green onions. Stir-fry for about 4-5 minutes until the vegetables are tender yet crisp.

          Combine: Return the chicken to the pan. Pour the prepared sauce over the chicken and vegetables. Stir to coat evenly. Allow the mixture to simmer for 2 minutes.

            Thicken the Sauce: Stir in the cornstarch mixture to the pan to thicken the sauce. Cook for an additional 1-2 minutes until the sauce is glossy and coats all ingredients.

              Serve: Remove from heat, garnish with sesame seeds and the green tops of the green onions. Serve hot over cooked rice or noodles.
