Ingredients
  

1 lb boneless skinless chicken breasts, cut into bite-sized pieces

1 cup bell peppers (red, yellow, and green), diced

1 cup pineapple chunks (fresh or canned)

1 medium onion, chopped

2 cloves garlic, minced

½ cup soy sauce

⅓ cup brown sugar

½ cup apple cider vinegar

2 tbsp ketchup

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

2 tbsp vegetable oil

1 tsp grated ginger

Salt and pepper to taste

Cooked rice or quinoa for serving (optional)

Sesame seeds and green onions for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, ginger, and a pinch of salt and pepper. Let it marinate for about 30 minutes.

    Prepare the Sauce: In a separate bowl, whisk together brown sugar, apple cider vinegar, ketchup, and cornstarch slurry until well combined. Set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add the chopped onion, garlic, and bell peppers. Sauté until they are tender, about 3-5 minutes.

          Add Pineapple and Sauce: Add the pineapple chunks and pour the prepared sauce over the sautéed vegetables. Bring the mixture to a simmer and let it cook for 2-3 minutes until the sauce thickens.

            Combine Chicken and Sauce: Return the cooked chicken to the skillet and stir everything until the chicken is well coated in the sauce. Cook for an additional 2 minutes to heat through.

              Serve: Serve the sweet and sour chicken over rice or quinoa, garnished with sesame seeds and chopped green onions.
