8 oz elbow macaroni

1 lb ground beef or turkey

1 packet taco seasoning

1 cup diced tomatoes (canned or fresh)

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup milk

1/4 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Chopped fresh cilantro or green onions for garnish

Tortilla chips for added crunch (optional)

Instructions
 

Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions. Drain and set aside.

    Prepare the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Add Flavor: Stir in the taco seasoning, diced tomatoes, black beans, and corn into the cooked meat. Mix well and let it simmer for about 5 minutes until everything is heated through.

        Combine Everything: In the skillet with the meat mixture, add the cooked macaroni, milk, garlic powder, onion powder, and sour cream. Stir to combine all ingredients evenly.

          Cheese It Up: Gradually add 1 cup of shredded cheddar cheese and 1 cup of Monterey Jack cheese to the pot, stirring until melted and creamy.

            Season: Taste and adjust seasoning with salt and pepper as needed.

              Bake (Optional): For an extra cheesy and crispy topping, transfer the mixture to a greased baking dish, sprinkle the remaining cheddar and Monterey Jack cheese on top, and bake at 350°F (175°C) for 15-20 minutes or until bubbly and golden.

                Garnish and Serve: Remove from the oven (if baked) and let it cool slightly. Garnish with chopped cilantro or green onions and serve with crushed tortilla chips for an extra crunch.
