8 oz elbow macaroni

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

4 tbsp butter

1/4 cup all-purpose flour

2 cups whole milk

1 tsp Dijon mustard

1/2 tsp garlic powder

1/4 tsp smoked paprika

1/4 tsp black pepper

1/4 cup breadcrumbs

Fresh chives, chopped (for garnish)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the elbow macaroni and cook until al dente, according to package instructions. Drain the pasta and set aside.

    Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for about 1-2 minutes until it turns a light golden color.

      Add Milk: Gradually whisk in the whole milk, ensuring there are no lumps. Continue to whisk for about 5-7 minutes until the mixture thickens and starts to bubble.

        Incorporate Cheeses: Lower the heat and stir in the Dijon mustard, garlic powder, smoked paprika, and black pepper. Gradually add the cheddar, mozzarella, and Parmesan cheese, stirring until everything is melted and well combined.

          Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce, mixing thoroughly to ensure the pasta is fully coated in the creamy sauce.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased baking dish.

              Add Breadcrumb Topping: In a small bowl, mix the breadcrumbs with a tablespoon of melted butter. Sprinkle the breadcrumb mixture evenly over the top of the mac and cheese.
